My boyfriend grew up in Kentucky so when came across this recipe looking for a bday treat I knew I had to try this recipe

Buttery Pecan Snowball Cookies
These Buttery Pecan Snowball Cookies are soft, delicate shortbread-style treats that melt in your mouth with every bite. Filled with finely chopped pecans and coated in layers of powdered sugar, they achieve their signature “snowball” look and irresistible sweetness.
Ingredients
Ingredient | Quantity |
---|---|
Butter, softened | 2 sticks |
Powdered sugar | 1½ cups |
Vanilla extract | 2 teaspoons |
Salt | Pinch |
All-purpose flour | 2¼ cups |
Finely chopped pecans | 1 cup |
How to Make Buttery Pecan Snowball Cookies
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
Step 2: Make the Dough
In a large mixing bowl, combine the softened butter, ½ cup powdered sugar, vanilla extract, salt, and all-purpose flour. Beat with an electric mixer until a smooth, cohesive dough forms.
Step 3: Fold in Pecans
Gently fold in the finely chopped pecans until evenly distributed throughout the dough.
Step 4: Shape and Bake
With slightly damp hands, roll the dough into 36 evenly sized balls, about 1 inch each. Place them on the prepared baking sheet and bake for 12 minutes, or until the bottoms are lightly golden.
Step 5: Cool and Coat with Sugar
Allow the cookies to cool completely on the baking sheet. Place the remaining 1 cup of powdered sugar in a shallow bowl and roll each cooled cookie in the sugar until fully coated.
Step 6: Serve and Enjoy
Serve immediately or roll the cookies in powdered sugar a second time once the first layer has set for a few minutes, for an extra “snowy” finish.
