Instructions

Step 1: Prepare the Steaks
Remove the ribeye steaks from the refrigerator about 30 minutes before cooking to bring them to room temperature. Pat them dry with paper towels and season generously with salt and black pepper on both sides.

Step 2: Sear to Perfection
Heat a heavy skillet (preferably cast iron) over medium-high heat. Add olive oil and 1 tablespoon of butter.
Once the pan is hot and the butter begins to sizzle, carefully place the steaks in the pan.
Sear for 4–5 minutes per side for medium-rare, or adjust based on your desired doneness.
Transfer the cooked steaks to a plate and set aside.

Step 3: Let the Steaks Rest
Loosely cover the steaks with foil and allow them to rest for 5–10 minutes while you prepare the sauce.

Step 4: Make the Creamy Garlic Sauce
In the same skillet, reduce the heat to medium and add the remaining 2 tablespoons of butter.
Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
Pour in the 1/2 cup beef broth, scraping up any browned bits (fond) from the bottom of the pan for extra flavor.
Stir in 1 cup heavy cream, 1/4 cup grated Parmesan, and 1 teaspoon Italian seasoning.
Simmer gently for a few minutes until the sauce thickens into a smooth, creamy consistency.

Step 5: Combine and Heat Through
Return the rested steaks to the pan. Spoon the sauce over the steaks and let them warm in the sauce for 1–2 minutes to absorb all the rich flavors.

Step 6: Serve and Enjoy
Plate the steaks, drizzle generously with the creamy garlic sauce, and garnish with fresh chopped parsley.
Serve warm with your favorite side dishes — mashed potatoes, roasted veggies, or a crisp salad.
