Smothered Pork Chops with Potatoes in Gravy

👩🍳 Instructions
1️⃣ Season the Pork Chops
Pat the pork chops dry, then season both sides with salt, pepper, paprika, and garlic powder.
2️⃣ Sear the Meat
Heat oil in a large skillet or Dutch oven over medium-high heat.
Sear the pork chops for 3–4 minutes on each side until nicely browned.
Remove from the pan and set aside.
3️⃣ Cook the Aromatics
Add sliced onions to the same pan and cook for about 5 minutes, until softened and golden.
Stir in minced garlic and cook for another minute.
4️⃣ Make the Gravy
Sprinkle flour over the onions and stir until evenly coated.
Gradually whisk in the chicken broth, ensuring no lumps remain.
Add cream, thyme, and butter, then simmer for 5 minutes until the gravy thickens.
5️⃣ Add Potatoes & Pork Chops
Nestle the potatoes into the gravy, then return the pork chops to the skillet.
Spoon some of the gravy over the top of each chop.
6️⃣ Simmer Until Tender
Cover and reduce the heat to low.
Cook for 25–30 minutes, stirring occasionally, until the potatoes are fork-tender and the pork chops reach an internal temperature of 145°F (63°C).
7️⃣ Finish & Serve
Garnish with chopped fresh parsley.
Serve warm, topped with plenty of extra gravy.
