1. Make the Cake Batter
Preheat & Whisk:
Preheat oven to 350°F (180°C). In a large bowl, whisk the eggs and salt until frothy.
Add Sugars & Oil:
Combine the sugar and vanilla sugar, then gradually whisk in the oil until smooth and glossy.
Prepare Coffee Mixture:
In a separate small bowl, mix the instant coffee with milk until dissolved.
Combine Dry Ingredients:
Sift together the flour, cocoa powder (used instead of bitter chocolate), and baking powder.
Mix Wet & Dry:
Add the dry mixture to the egg mixture alternately with the coffee-milk mixture, stirring gently until just combined.
2. Bake the Cake
Grease and flour a cake pan, then pour in the batter.
Bake for 35 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool completely before adding the topping.
3. Make the Coffee Topping
Mix Dry Ingredients:
In a saucepan, whisk together sugar, cornstarch, and instant coffee.
Cook the Custard:
Slowly whisk in the milk to avoid lumps. Cook over medium heat, stirring constantly, until the mixture thickens to a custard-like consistency.
Add Flavor:
Remove from heat and whisk in the cream cheese and Lotus Cream until smooth and creamy.
