This timeless Cranberry Pineapple Jell-O Salad is a bright and festive side dish, perfect for holiday gatherings. It combines a tangy Jell-O base with sweet pineapple, tart cranberry sauce, and crunchy pecans for a delightful texture and flavor.
Cranberry Pineapple Jell-O Salad
Ingredients:
- Jellied cranberry sauce – 1 (14 oz) can
- Raspberry or cranberry Jell-O – 1 (6 oz) package
- Crushed pineapple, drained – 1 (20 oz) can
- Chopped pecans – 1 cup
- Boiling water – 1 cup
- Cold water – ½ cup
Instructions:
1. Dissolve Jell-O: In a large bowl, pour 1 cup boiling water over the Jell-O powder and stir until completely dissolved.
2. Add Liquids: Mix in ½ cup cold water and the reserved pineapple juice (about ¼ to ½ cup) from the drained pineapple.
3. Incorporate Cranberries: Break up the jellied cranberry sauce with a fork, then fold it into the Jell-O mixture, leaving a few chunks for texture if you like.
4. Add Pineapple and Pecans: Stir in the drained pineapple and chopped pecans until evenly combined.
5. Chill: Transfer the mixture to a serving dish or mold. Cover and refrigerate for at least 4 hours, or until fully set.
6. Serve: Slice and enjoy chilled.
