1. Prep the Pork:
Trim excess fat from the pork loin, leaving about ¼ inch to keep it flavorful and juicy.

2. Season Generously:
Combine all dry seasonings in a small bowl. Rub the mixture all over the pork loin, coating it evenly. Cover and refrigerate for 1–2 hours to let the flavors absorb.

3. Sear for Flavor:
Heat olive oil in a Dutch oven or heavy skillet over medium-high heat. Sear the pork on all sides until golden brown.

4. Roast with Vegetables:
Place the pork loin in a roasting pan and surround it with carrots, potatoes, and onions.
