Oklahoma Nut Candy: A Southern Treat Full of Tradition and Crunch

Oklahoma Nut Candy is a rich, old-fashioned treat with a creamy, caramelized base loaded with crunchy walnuts or pecans. Perfect for holiday gatherings or as a sweet gift, this candy is as indulgent as it is nostalgic.

Ingredients:

  • Heavy cream – 2 cups
  • Walnuts or pecans, chopped – 1½ cups
  • Unsalted butter – ½ cup
  • Vanilla extract – 1 teaspoon
  • Baking soda – ¼ teaspoon
  • Sugar, divided – 6 cups (2 cups + 4 cups)

Instructions:

  1. Prep the Pan: Lightly grease a 9×13-inch baking dish and set aside.
  2. Melt the First Sugar: In a small, heavy-bottomed saucepan, melt 2 cups of sugar over low heat, stirring frequently until fully liquefied, about 20 minutes.
  3. Simmer the Cream Mixture: While the sugar melts, combine the remaining 4 cups of sugar with the heavy cream in a large saucepan or Dutch oven. Simmer gently over low heat.
  4. Combine Sugars: Once the first batch of sugar is fully melted, pour it into the cream mixture, stirring constantly.
  5. Cook to Softball Stage: Increase heat to medium and cook until the mixture reaches 244°F (118°C), the softball stage (a small amount dropped in cold water forms a soft ball).
  6. Add Baking Soda: Remove from heat and stir in the baking soda until fully incorporated.
  7. Add Butter & Vanilla: Stir in the unsalted butter and vanilla extract until the mixture is smooth and glossy.
  8. Rest: Let the mixture sit undisturbed for 20 minutes.
  9. Add Nuts: After resting, fold in the chopped walnuts or pecans until evenly distributed and the mixture loses its shine. Pour into the prepared baking dish.
  10. Cool & Serve: Allow the candy to cool for 1–2 hours, or overnight. Cut into bite-sized squares and enjoy!
