This traditional 7-Minute Frosting is a light, glossy, and airy meringue-style icing. It’s made by whipping egg whites while gradually adding a stream of hot sugar syrup, which gently cooks the whites and creates a stable, marshmallow-like topping that’s perfect for cakes and cupcakes.

How to Make 7-Minute Frosting
Step 1: Prepare the Sugar Mixture
In a medium saucepan, combine the granulated sugar, cold water, and cream of tartar. Stir over medium heat until the sugar dissolves completely and the mixture begins to boil gently.
Step 2: Cook the Sugar Syrup
Once boiling, stop stirring and let the syrup cook undisturbed. Using a candy thermometer, heat it until it reaches 240°F (115°C) — the soft-ball stage. This will take about 5–7 minutes.
Step 3: Beat the Egg Whites
While the syrup cooks, place the egg whites in a large mixing bowl. Using an electric mixer, beat on high speed until stiff peaks form.
Step 4: Combine the Mixtures
When the syrup reaches temperature, remove it from the heat. With the mixer running on high, slowly and carefully pour the hot syrup in a thin stream into the beaten egg whites. Continue beating constantly as you pour.
Step 5: Whip Until Thick and Glossy
After all the syrup is added, keep beating the mixture on high speed for about 7 minutes. The frosting will become thick, shiny, and hold firm peaks.
Step 6: Add Vanilla
Add the vanilla extract and beat for another 30 seconds, just until evenly combined.
Step 7: Use Immediately
