Homemade Tapioca Pudding

Instructions
Step 1 – Soak the Tapioca:
Place the tapioca pearls in a medium bowl and cover them with cold water. Let them soak for at least 30 minutes (or follow the time suggested on your package).
Step 2 – Make the Pudding Base:
In a heavy-bottomed saucepan, whisk together the sugar, milk, eggs, and salt until smooth and well blended. Drain the soaked tapioca and stir it into the saucepan mixture.
Step 3 – Cook the Pudding:
Set the saucepan over medium heat and bring the mixture to a gentle boil, stirring constantly so the tapioca doesn’t stick. Once it reaches a boil, reduce the heat to low and let it simmer for 15–20 minutes, stirring often, until the pearls turn translucent and the mixture thickens to a creamy, pudding-like consistency. Remove from heat and stir in vanilla extract, if using.
Step 4 – Serve and Garnish:
Spoon the pudding into individual bowls or a large serving dish. Let it cool slightly before serving warm, or refrigerate for a few hours for a chilled version. Top with a light dusting of cinnamon or nutmeg for a hint of warmth and flavor.
