1. Prepare the Mixture

Combine Ingredients: In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, eggs, flour, garlic powder, onion powder, salt, pepper, and chives (if using). Mix until the ingredients are evenly blended.

Shape the Puffs: Scoop about 2 tablespoons of the mixture and form into small balls or patties. Place them on a plate or tray while you heat the oil.


2. Fry the Cheese Puffs

Heat Oil: Pour about 1/4 inch of vegetable oil into a large skillet and heat over medium heat until it reaches 350°F (175°C).

Fry Puffs: Working in batches, carefully add the potato puffs to the hot oil. Fry for 2–3 minutes per side, or until golden brown and crispy.
Use a slotted spoon to transfer them to a paper towel–lined plate to drain excess oil.


3. Serve

Serve warm with your favorite dipping sauce—try marinara, ranch, or sour cream for a perfect pairing.
