These Cheesy Tortilla Corn Bites make a deliciously crispy and creamy snack or appetizer. Each Tostitos Scoop is filled with a rich blend of jalapeño pepper jack cheese, cream cheese, and sweet corn, then baked to golden, bubbly perfection.
Cheesy Tortilla Corn Bites
Ingredients:

Tostitos Scoops tortilla chips | 1 bag |
Cream cheese, softened | 1 cup |
Shredded jalapeño pepper jack cheese | 1 cup |
Corn kernels (fresh, frozen and thawed, or canned and drained) | 1 cup |
Egg, beaten | 1 |
Instructions:
Step 1: Preheat and Mix the Filling
Preheat the oven to 350°F (175°C). In a medium bowl, mix together the softened cream cheese, shredded jalapeño pepper jack cheese, corn kernels, and beaten egg until smooth and well combined.
Step 2: Arrange the Chips
Place the Tostitos Scoops tortilla chips on a parchment-lined baking sheet.
Step 3: Fill and Bake
Spoon a small portion of the cheese and corn mixture into each chip, being careful not to overfill. Bake for 10–12 minutes, or until the cheese is melted and bubbly and the chips are lightly golden.
Step 4: Serve and Enjoy
Remove from the oven and let cool slightly before serving. Enjoy these bites warm for the best flavor and texture.
