Step 1: Make the Batter
In a mixing bowl, combine the flour, cornmeal, sugar, baking powder, milk, chopped onions, salt, and pepper. Stir until the batter is smooth and evenly mixed.
Step 2: Heat the Oil
Pour ½ to 1 inch of oil into a deep skillet and heat over medium-high heat. The oil should reach about 350°F (175°C) for optimal frying.
Step 3: Fry the Fritters
Spoon the batter into the hot oil, about a tablespoon at a time, flattening slightly with the back of the spoon. Fry until golden brown on one side, then flip and cook the other side, about 2–3 minutes per side.
