How to Make Homemade Tapioca Pudding
Step 1: Soak the Tapioca
In a medium bowl, add the tapioca pearls and enough cold water to fully cover them. Let them soak for at least 30 minutes, or as directed on the package instructions.
Step 2: Prepare the Pudding Mixture
In a heavy-bottomed saucepan, whisk together the sugar, milk, eggs, and salt until smooth and well combined. Drain the soaked tapioca pearls, then stir them into the saucepan with the milk mixture.
Step 3: Cook the Pudding
Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring constantly to prevent sticking. Once it begins to boil, reduce the heat to low and simmer for 15–20 minutes, stirring frequently, until the tapioca pearls turn translucent and the pudding thickens to a custard-like consistency. Remove from heat and stir in the vanilla extract, if using.
Step 4: Serve and Garnish
Spoon the tapioca pudding into individual bowls or a large serving dish. Let it cool slightly before serving warm, or refrigerate for a few hours for a chilled version. Garnish with a light dusting of ground cinnamon or nutmeg, if desired.
